Bears Healthier Chocolate Muffins
These fluffy, healthier, chocolate muffins, made with Bears Nutrition Brain Booster Shake, are a delicious breakfast or afternoon snack!
What you'll need:
3 ripe bananas
1/2 cup greek yogurt (plain or vanilla)
1/3 cup honey
1 tsp vanilla
2 tbsp peanut butter
1 1/2 cup flour
1 tsp baking soda
1/3 cup cocoa powder
1/2 cup chocolate chips
In a blender, combine bananas, greek yogurt, honey, vanilla, and peanut butter. Blend until smooth (1-2 minutes).
Add egg to the smooth mix and blend on low until combined.
In a mixing bowl, combine flour, cocoa powder, and baking soda.
Add blended mixture to dry mixture and stir in chocolate chips.
Using an ice cream scoop or two spoons, fill the mini muffin cups to the brim with batter.
Bake 15 - 20 minutes at 350°F (176°C)
Insert a toothpick into the centre of a muffin, it should come out clean (check a few spots as the melted chocolate chips will make the tester look wet).
Transfer to a wire rack and let cool for about 5 minutes before removing the muffins from the pan.
Cool completely on a rack.
